"Fool For Love", definitely. I don't know if I have anything to say about that episode that hasn't already been said, but if that entire conversation between Buffy and Spike in the bar (complete with flashbacks) didn't make it one of the best episodes of BtVS, then Spike at the end flipping between the Big Bad and Love's Bitch would.
