Faith, Malcom, River, and Simba.
I can't see any of these characters freaking out. Well, except River, but no more so than usual. Malcom would become the leader. Faith would sneak candy bars.

That would be Katara and Raederle.
Katara likes vanilla chocolate swirl. Raederle just prefers chocolate. Katara guesses correctly for Raederle and orders her chocolate, but Raederle orders strawberry for Katara.

Anna seems pretty damn happy with Kristoff, but we'll say he's out of the picture. Anna, in general, isn't very good with slow burn, but I could see her having a slow burn with a female character. I.e. she takes awhile to fall for a woman because she doesn't realize she was attracted to women. Of the women on my list, I'm going to go for Karen Page. They would like each other from the start, but it would take awhile for them to figure out their feelings for each other are romantic.
Would be enemies to lovers with Nell Crain?
I'm going to go with Faith for that one. Nell would hate her at first, but as Faith redeems herself and Nell learns more about her troubled past, feelings develop.
Who would be fun to see fake dating Rick Blaine?
Louis Renault, but he's not on the list. I'll go with Sam Winchester. I can think of plenty of situations where the two would end up working some kind of job together, and it would be interesting for Rick to find out about the supernatural.

Karen chooses dare - much less dangerous in her book than offering truth. Isabela creates a large palm tree and dares Karen to climb it. Karen takes the dare, but can't make it to the top.

Sam Winchester specializes in this kind of thing, so I will give it to him. I think Simba would be least likely to survive, especially young Simba who is so cavalier about danger

Owen and Sam quickly rub each other wrong way and get distracted by arguing. Simba is a lion, and doesn't understand escape rooms. Raederle is focused and she's good at it, but she can't get the others in line to help her. They fail.
If Sam Winchester were going to a fan convention of sorts, what would they most likely cosplay as?
I feel like this probably happened in canon. I could see him going as Luke Skywalker.
